    Observed soiled wiping cloths on food prep surfaces. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

  • K22: Sewage and wastewater properly disposed

    Observed employee to be washing the trashcans and dump the waste water in the the small circular floor drain (not the floor sink). The wastewater was all over the floor in the warewashing part of the kitchen. Employee mopped the waste water up and sanitized the floors. [CA] Discontinue washing trashcans in this manner that results in wastewater all over the kitchen floor. Dump wastewater in suitable receptacle such as the mop sink.
