    Observed home style refrigerators at the facility such as the dual freezer/refrigerator in the kitchen and the short single door refrigerator in the bar. [Corrective Action] A commercial facility shall use commercial equipments.

    Potentially Hazardous Foods (PHFs) such as chicken, shrimp, fish eggs, and sushi rice was observed stored at room temperature without any discard labels. Sushi on the train was made around 11:30 AM and not logs or time tracking method was observed. Operator was not able to provide any written procedures. [Corrective Action] Facility that leaves PHFs out at room temperature and utilizes TPHC shall be writteen procedures and a method to monitor time. [Suitable Alternative] Operator labeled the PHFs left out at room temperature. The TPHC form shall be emailed to operator.
