K07M - Improper holding temperatures - In the kitchen area, measured potentially hazardous foods held cold at 41F or below and held hot at 135F and above. - Measured 2 door prep unit with ambient air temperature between 37F and 41F. Measured ambient air temperature of walk-in refrigerator at 33F and 41F. - Continue to monitor and maintain refrigeration in good repair. K09M - Improper cooling - On the counter-top, measured carnitas cooling in a shallow container and ice bath at 115F after 30 minutes. Discussed with operator to cool large pieces of meat on a sheet tray with meat placed in a single layer. - In the walk-in refrigerator, measured cooked rice cooling in a shallow container at 62F after an hour. Measured an additional container cooked at the same time cooled to 41F. - Leave cooling containers of food uncovered and cover with lid when food has adequately cooled to 41F or below.

Operator instructed to add additional water for hot water baths, and to mix hot food often in the steam table to keep foods hot at 135F and above.
