Note: This practice has been observed on several occasions. [CA] Food on display shall be protected from contamination by the use of packaging, counter, service line, or sneeze guards that intercept a direct line between the consumer's mouth and the food being displayed, containers with tight-fitting securely attached lids, display cases, mechanical dispensers, or other effective means.

[COS] Items were placed on TPHC since removing from oven. Chef Joshua stated their client requested for excess food to be donated.     Milk at the buffet service was measured at 49°F. The milk was stored on a thin ice bath. Per chef, they usually put it in the cold hold well. The service line opens at 9 am. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Chef agreed to mark it for discard along with the buffet food as they came out at the same time.
