    The used wiping towels were observed on tables in the kitchen. [CA] They must be stored in sanitizer between each use. [COS] Corrected

    The drain pipe is in the floor sink under the sink. [CA] Raise it to provide an air gap.

    The walk in refrigerator is holding food 43- 45 degrees F. [CA] The food must be at 41 degrees F maximum. [COS] The PHFs were put into the other refrigerators. According to the manager and then owner on the phone the temperatures were checked at 11 a.m and all were fine.

    The hand washing sink was full with plastic lids for food containers. [CA] Rewash, rinse, and sanitize them all. Do not place items in the hand washing sink. [COS] They were all removed and placed in the 3 comp sink for rewashing properly.

    Not all employees have food handler cards. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

    The produce refrigerator is not working. [CA] repair the unit to hold food 41 degrees F maximum. Currently there is ice under the produce items on the unit. Temperature is being logged by the employee.

  • K38: Adequate ventilation/lighting; designated areas, use

    Observed the light cover missing in the walk in. [CA] Replace the missing light cover or replace the bulb with a shatterproof ligh bulb.
