    Cooling of freshly cooked rice, beef stew, and beans was done at room temperature. [CA] All hot-held food products must be cooled from 135 OF to 70 OF within the first two hours and from 70 OF to 41 OF with another four hours by: (1) Placing the FOOD in shallow pans. (2) Separating the FOOD into smaller or thinner portions. (3) Using rapid cooling EQUIPMENT. (4) Using containers that facilitate heat transfer. (5) Adding ice as an ingredient. (6) Using ice paddles. (7) Inserting appropriately designed containers in an ice bath and stirring frequently. The manager demonstrated the proper cooling procedure using an ice bath and smaller portions.

FOLLOW-UP INSPECTION

Note: This is a follow-up inspection to the routine inspection which was conducted on 07/25/25. During the time of the routine inspection, the hot- holding case not working property. Excessive flies were also observed on the kitchen which also is located adjacent to the meat department. The hot-holding case is now working properly. The store has contacted a pest control company and conducted an intervention. There still are fly issues in both the deli and the meat department, but the store has conducted a thorough cleaning and it is working with the pest control company to install fly traps on areas where food preparation is not conducted. The manage is told to conduct a regular thorough cleaning on the floor area, floor sinks, trench lines, and the equipment used to sliced, chop, and package meat products. He also is told to keep the dumpster area clean, the back door closed, and increase the green trash collection frequency to prevent vermin breeding.

Note: This is a follow-up inspection to the routine inspection conducted on 01/14/2025. The Deli was issued a conditional pass due to the lack of paper towel supply on the handwash stations and for accumulation of sewage on some of the damaged floor patch areas. Both violations are now corrected. Therefore, the facility is issued a passing green placard. All the other minor violations are also corrected.
