The person in charge refilled one sink of the warewash sink with lukewarm water and added bleach manually to create a 100-ppm chlorine solution to sanitize the utensils (COS).

    Couple of dead cockroaches were observed on the floor below the water heater and below the wash sinks. [CA] Food facility shall be kept free of non-disease carrying insects, weevils, ants, gnats, and fruit flies. Eliminate any insect from the facility by legal methods. Please conduct a regular cleaning and replace the traps immediately.

    There is a very slow drain from the floor sinks located below the wash and preparation sinks. [CA] Improve the drain flow of the floor sinks to prevent any backup of gray water.

FOLLOW-UP INSPECTION

Follow up inspection for inspection conducted on 10/2/2024. Per PIC, school district has a certified person to apply pesticide. A pest control log is posted on the wall near walk-in fridge. No sign of active cockroach activity at the time of inspection. Observed floor sink which was infested with cockroaches was cleaned. Per PIC, all equipments were cleaned and sanitized after treatment. Holes near 3 compartment sink were sealed. Continue to seal holes and gaps throughout facility. Continue to monitor cockroach activity. OK to food prep with open food.

Subsequent follow up inspections after first follow up shall be billed $298/hr during business hours; $645/hr during non business hours (after 4:30pm Monday through Friday, county holidays and weekends) upon availability. Failure to comply may result in enforcement action. Any leftover is discarded after each shift.

[CA] The premises of each food facility shall be kept free of vermin. A food facility shall not operate when there is a vermin infestation that has resulted in the contamination of food contact surfaces, food packaging, utensils, food equipment, or adulteration of food(s). Food facility can only serve pre-packaged items until: there is no longer evidence of a vermin infestation; all contaminated surfaces have been cleaned and sanitized; and contributing factors such as cleaning, repairs, and the elimination of harborages have been resolved.
