Drain lines for the air conditioning system is draining into a bucket next to the oven. [CA] All equipment that discharges liquid waste shall be drained by means of indirect waste pipes, and all wastes drained by them shall discharge through an airgap into a floor sink or other approved type of receptor. Make lines drain into a floor sink.

Food handler cards and food manager certifications have expired. [CA] Obtain a new food manager certification within 60-days and food handler cards within 30-days.

Food debris noted around the prep table floor and around the flour in the back of the facility. [CA] Walls and/or floors in food preparation area shall be kept clean.

Flooring next to the mixer in the back of the facility is damaged at the time of inspection. Per PIC, they have a contractor that will be working on the flooring soon. [CA] The floor surfaces shall be smooth, of durable construction, and of nonabsorbent material that is easily cleanable.
