Observed bean sprouts subject to TPHC time marked with a start time of 9am, held past its 4 hour discard time. [CA] PHFs utilizing time as a public health control (TPHC) shall be discarded within 4 hours from the point in time when food is removed from temperature control. [COS] Bean sprouts discarded at the time of inspection. Observed whipped butter and fried chicken held at room temperature, subject to TPHC without time markings. PIC stated that both items were removed from temperature control 2-3 hours prior. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Items discarded at the end of lunch service. TPHC procedures not available. New procedures emailed to facility, once competed return to inspector for review and approval.
