    Observed cardboard used as shelf liner. [CA] Discontinue the use of cardboard boxes to line shelves/flooring, use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

  • K44: Premises clean, in good repair; Personal/chemical storage; Adequate vermin-proofing

    Observed multiple unused refrigerator units stored in the facility. Per PIC, these items are not working and only used as storage. [CA] The premises of a food facility shall be free of litter and items that are unnecessary to the operation or maintenance of the facility, such as equipment that is nonfunctional or no longer used. Removed unused and non operational equipment and use approved storage for boxes and other items.

    Lack of food handler cards for employees. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

    *Repeat violation Lack of TPHC for PHF items on sales aisles. Per PIC, PHFs were stored on the aisles at 1:30 PM. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] PIC time marked the items to use or discard within 4 hours from when it was taken out of temperature control.

    Observed raid spray in the back kitchen area. [CA] Only those insecticides, rodenticides, and other pesticides that are necessary and specifically approved for use in a food facility may be used.
