    At the front handsink: observed clean utensils and paper cups were stored next to the sink. The handsink lacked a splashguard. [CA] Store clean utensils/cups away from handsink and/or install an approved splashguard.

  • K44: Premises clean, in good repair; Personal/chemical storage; Adequate vermin-proofing

    Observed mop was stored with mop head in bucket. [CA] When not in use, store mops so they can air-dry.

    In the rear prep unit, in a prep insert: measured internal temperature of cut tomatoes to be 45F. PIC stated the tomatoes had been cut at 11am (approximately 90 minutes prior). The tomato prep insert was observed to be overfilled. Note: other PHFs in the unit measured 41F. [CA] Keep potentially hazardous foods at 41F and below or 135F and above. [COS] Cut tomatoes were placed in the reach-down section of the prep unit.

    In the rear storage area: observed heavy accumulation of dust on the bottom shelf, where pots are stored. [CA] Keep shelves clean.

    Observed Time as a Public Health Control was used for the cooked boba (observed time marking), but no TPHC written procedures were available upon request. [CA] When using TPHC, written procedures must be made available. Provided TPHC form.

    Observed aluminum foil was used as lining on surfaces. [CA] Discard foil and discontinue use as lining. Surfaces must be smooth, durable, and easily cleanable.
