Chemical company to deliver this week. Use 1 capful of bleach to 1 gallon of water when manually sanitizing in the meantime.

[CA] Maintain potentially hazardous food 135F and above or 41F and below. [COS] Food was time marked 10a-2p. All left over noodles will be discarded in the trash at 2 pm. Place eggs in a container with ice and water during service. [COS] Note: When time only, rather than time and temperature is used as a public health control (TPHC), PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. Spoons were placed in each container.

Spoke to manager about thawing meats in walk in cooler 2 days prior to use.

OWNERSHIP CHANGE INFORMATION NEW FACILITY NAME: STEAM NEW OWNER: HANNAH INTERNATIONAL INVESTMENT GROUP INC The applicant has completed the change of ownership application process for an Environmental Health Permit. The permit category for this facility is FP14. An invoice for the permit fee in the amount of $1,723.00 will be mailed to the billing address on the application. Payment must be submitted within 10 days of receipt of the invoice. The owner is responsible for contacting our department if an invoice is not received and remit payment within 30 days. The Environmental Health Permit will be effective: 4/01/2025- 3/31/2026. This report serves as a temporary permit. However, the permit will be deemed invalid if the permit fee is not paid in full within 30 days from the date of this report. Okay to Operate. An official permit will be mailed to the address on file and shall be posted in public view upon receipt. *Structural Review inspection conducted on 3/31/2025. *Permit condition: None. *Obtain food safety manager certificate within 60 days.     Measured 2 sealed/closed bags of egg noodles measured at 50F at front counter prep unit. Manager stated noodles were from yesterdays delivery. Noodles are delivered hot daily. [CA] When noodles are received, ensure they are transferred to a stainless steel container, locate in refrigerator and left uncovered and cooled down from 135F to 70F in 2 hours and 70F-41F in 4 hours. 2 bags of egg noodles were discarded.
