Siu mai at the steam table was measured at 122 degrees Fahrenheit. Per PIC, the heat was turned off at 2:00 PM and is allowing the siu mai to cool before moving it into refrigeration. [Corrective Action] If the intent is to cool the food, remove it from the steam table and place at an area to quickly cool from 135 - 70 degrees Fahrenheit in 2 hours and 70 - 41 degrees Fahrenheit in another 4 hours. [Suitable Alternative] Siu mai was removed from steam table and moved into refrigeration.

Observed meat thawing at room temperature in the 2 compartment prep sink. [Corrective Action] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.
