Per PIC, the chile relleno have been out for less than 1 hour for the lunch rush. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Facility may consider using time as a public health control. [COS] PIC put the tray of chile relleno back into the walk-in cooler to rapidly cool.
