Charged follow-up inspection. Facility will be billed $298/hr. K23 : No evidence of live vermin within the food facility during inspection. Operator provided pest control records for review. Continue to thoroughly clean and sanitize the facility. Remove grease and food debris from walls, equipment, and floors. Seal any gaps/holes to prevent pest harborage. Continue receiving pest control services regularly. Facility is ok to reopen.

This is a follow up inspection for the routine inspection conducted on 11/6/2024 to verify compliance of major violations. Observations: K06: Facility has provided a soap dispenser and paper towel dispenser. The faucet has been adjusted to be able to reach all three basins. K14: Facility has provided drain plugs and an attached hose to fill the three compartment basins. Chlorine measured at 100 ppm. K23: Live cockroaches of all life stages were found in the bar area. Facility provided a pest control service receipt at time of the inspection. Contact inspector at (408) 918 - 2726 to schedule follow up inspection. The first follow up inspection is free of charge. Any and all subsequent follow up inspections shall be charged at the approved hourly rate of $298.00/hr, minimum of one hour, during normal business hours: Monday through Friday 7:30am to 4:30pm or $645/hour minimum two hour during non business hours, and upon inspector availability.

    Staff were observed skipping the sanitizing step of ware washing while manually washing dishes. [CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM).
