ROUTINE INSPECTION

  • K40: Wiping cloths: properly used, stored

    Multiple wet soiled wiping cloths stored on counters. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

  • K33: Nonfood contact surfaces clean

    Accumulation of dirt grease and debris below and in between equipments. [CA] Clean and sanitize routinely to prevent buildup.

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    Food preparation sink is detached from the wall, faucet is in disrepair. [CA] All plumbing and plumbing fixtures shall be installed in compliance with applicable local plumbing ordinances, shall be maintained so as to prevent any contamination, and shall be kept clean, fully operative, and in good repair.

    Water temperature at the 3-comp sink and the food preparation sink was measured at 116F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks.

    Heavy accumulation of grease observed on the wall at the front, and throughout kitchen in the back. [CA] Walls and/or floors in food preparation area shall be kept clean.

    Raw chicken stored above sausages and other ready to eat food items. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items. Boxes of food and trays of vegetables are stored directly on the floor at the cookline. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.

    Potentially Hazardous Foods (PHFs) at front are kept on Time as Public Health Control (TPHC) according to the manager. No time markings or written procedure was available for review. Manager states they are using business hours to monitor the time. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Manager was directed to time mark all PHFs kept on TPHC to discard within 4 hours of when removed from temperature control.
