Repeat Violation: The front doors are kept open. [CA] Keep back door closed at all times or provide an alternate method such as an air curtain to prevent the entrance and harborage of vermin.
- K43: Toilet facilities: properly constructed, supplied, cleaned
One of the toilets in the women's restroom is in disrepair. Note: An out of order sign was affixed to the stall door. The other toilet was functioning normally. [CA] Toilet facilities shall be maintained clean and in good repair.
- K40: Wiping cloths: properly used, stored
Quaternary ammonia based sanitizer solutions in sanitizer buckets measured at less than 100 PPM of quaternary ammonia. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).
- K14: Food contact surfaces clean, sanitized
At the three compartment sink, quaternary ammonia measured at 100 ppm. Per staff, they dilute the auto dispensing sanitizer solution. [CA] Maintain chemical solution for manual warewashing at 200 ppm (1 tbs of quaternary ammonium (10%)/2 gal of water) for quaternary ammonium. [COS] Staff were educated on proper concentration requeirements for quaternary ammonia. Dispensing system measured at 200 ppm of quaternary ammonia.
