Food prep was observed at the 3 compartment sink. The 3 compartment sink is indirectly connected to the floor sink. All utensils are washed at the dishwasher machine. Reminded PIC that there shall be no food prep at the 3 compartment sink if there is active warewashing at the 3 compartment sink. Discussed utilizing fly trays, UV light, air curtain since front and side doors are left open. A routine inspection was conducted in conjunction with a complaint investigation.
