ROUTINE INSPECTION
Facility has created a dining area and do not have a customer restroom. This was discussed during the Change of Ownership. PIC stated guests are monitored and walked through the kitchen on the food storage side (not the food prep side) to the back restroom. Spoke with Supervisor Liz Tobin and agreed that facility can continue doing this as long as they provide SOPs to the Department by 6/16/2026. If guests are observed walking through kitchen unattended, the exception will be revoked.

- K14: Food contact surfaces clean, sanitized
Observed brown mold like build up in the ice machine. [CA] Thoroughly clean and sanitize ice machine on a regular basis.
- K27: Food separated and protected
Observed raw shell eggs stored over rice in the reach-in unit. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items.
- K07: Proper hot and cold holding temperatures
Observed potentially hazardous food that measured in the temperature danger zone located in the food prep unit (octopus balls 46F). Per PIC, the balls were in the unit since yesterday. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace unit if necessary. [COS] PIC voluntarily discarded the top layer of balls.
