Some hood filter inserts are bent and broken. [CA] Ventilation hood filters shall be maintained clean and good repair.
- K21: Hot and cold water available
Handwash sink in bathroom measured at 68F. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds.

Handwash sink near warewash area was not stocked with paper towels and bucket was placed inside basin. [CA] Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels and handwash sink shall be unobstructed at all times. [COS] Paper towels were restocked at time of inspection and bucket was removed.

Shredded cheese and pico de gallo was measured at 47F in prep insert. Per PIC, items placed in prep unit less than 2 hours prior. [CA] PHFs shall be held at 41°F or below. [COS] Employee closed prep insert lid to bring temp down.

Personal belongings stored in dry storage on food shelving. [CA] No person shall store clothing or personal effects in any area used for the storage and preparation of food or food contact surfaces.

Box of avocados stored on floor of walk-in cooler. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.

Accumulation of fruit flies in back storage area. [CA] Food facility shall be kept free of non-disease carrying insects, weevils, ants, gnats, and fruit flies.

Wiping cloths stored on prep surfaces throughout facility. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

Chlorine sanitizer measured at 25ppm in 3-comp sink. No active warewashing during inspection. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Employee added more chlorine to measure 100ppm.
