Measured containers of chicken tenders holding at 103F at prep table. Per operator, PHFs under time as a public health control (TPHC), no time log or time mark observed. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Operator provided time log.

Several wet/used wiping cloths stored on preparation tables. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).

Measured cold PHF's above 41 F and hot PHF's below 135 F at the preparation counter (see measured observations). PIC stated that the items were removed from temperature control 30 minutes prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Items placed on paper logs with a start and discard time. Submit TPHC procedures for review and approval.
