Notes: - Per PIC, they were affected by the Colonnade's water shut off on 12/12/24 from 9:00 am - 5:00 pm. As a reminder a facility is to cease operation when there is a lack of an approved, adequate, protected, pressurized, potable supply of hot water and cold water.

    1. Knives were dirty to both sight and touch from being stored between the knife holder and the wall. [CA] Ensure to maintain all food contact surfaces clean to both sight and touch and sanitize as required. 2. In the back of house area, at the ware washing area, staff were observed dipping several knives into the quaternary ammonia sanitizer for less than the required time. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Inspector instructed staff to submerge for 60 seconds. Note: Per staff they didn't submerge into the solution as they didn't want to risk hurting themselves if they picked up the knives wrong. Recommend submerging knives in a insert pan to fully submerge knives and remove while reducing risk. Staff may also allow the solution to clear up so they can see the knives while submerged.

    In the back of house area, at the magnetic holder for knives, knives were observed to be stored in between the holder and the wall. [CA] Properly store utensils and equipment in a clean and sanitary manner.

    In the dry storage area, at the two door upright freezer, the right door gasket is in disrepair. [CA] Ensure to maintain equipment clean and in good repair. Repair or replace the gasket.
