Observed ice scoop stored directly in contact with ice in the ice machine. [CA] Ensure ice scoop in the ice machine is stored with the handle facing away from the ice to prevent possible contamination.

At the ice machine, on the inner panel, observed mold-like growth. [CA] Ensure inner panel of the ice machine is frequently cleaned and sanitized to prevent possible contamination of food (ice).

At the front counter, observed employee clean hands at the handwash station using hand soap and dry using a cloth towel/wiping cloth. [CA] Hands shall be properly washed at handwash stations using warm water, hand soap, and paper towels. [COS] Operator rewashed hands using hand soap and paper towels.

At the sushi prep area, observed shrimp tempura, sushi rice, and prepared California rolls stored without time markings/time logging. Per operator, shrimp tempura was prepared 15 minutes prior, sushi rice prepared 2 hours prior, and California roll prepared 30 minutes prior. [CA] When potentially hazardous foods are maintained by time, rather than time and temperature, PHFs shall be time labeled when removed from temperature control and served within 4 hours or discard. [COS] Operator time logged shrimp tempura, sushi rice, and California rolls.
