ROUTINE INSPECTION
Ice cream is made here. A license from the California Department of Food & Agriculture (CDFA) must be obtained for the production of ice cream. For additional information, contact the Milk and Dairy Food Safety Branch at (916) 900-5008 to obtain the appropriate permit. The owner did not sign at this time as he needed to leave to an emergency appointment. Came to facility 1-14-26 for signature. (Owner was unable to give a signature during yesterdays inspection due to owner having to leave for an emergency appointment.) The owner did confirm that he has a milk and dairy food safety unit certificate.

No FSC or food handler card available. [CA] At least one employee must have a FSC and others that prepare food items must have a food handler card.
- K21: Hot and cold water available
The water at the dish sink reached 104 degrees F. [CA] The water must reach 120 degrees F at the dish sink. [COS] rechecked 1-14-26 per owners request before he signed and it reached 120 degrees F. (unable to obtain signature during yesterdays inspection due to owner having to leave for an emergency appointment.)

Observed a package of raw meat stored above cream. [CA] Always store all raw meat, seafood, and poultry below all other foods. Store the personal items such as the chicken separate and below from food facility ingredients.
- K35: Equipment, utensils: Approved, in good repair, adequate capacity
The bare wood shelves are becoming soiled. [CA] The bare wood shelves are not approved type shelving and must be replaced with approved shelves.
- K38: Adequate ventilation/lighting; designated areas, use
Observed light bulbs out causing dim lighting in the facility. [CA] Replace the light bulbs that are out.
- K39: Thermometers provided, accurate
Observed no thermometer in the upright refrigerators. [CA] Provide thermometers in each unit to monitor proper temperature.
- K45: Floor, walls, ceilings: built,maintained, clean
Observed floor to have thick accumulation of some food spills under the back shelf against the right side wall and in front of the mixing equipment. [CA] Clean the floor thoroughly.
