Note: Per Laura, they had the dishwasher replaced a month ago and it was a like for like replacement. The previous report noted a chlorine based dishwasher and a hot water dishwasher was observed today. Further evaluation required.

Facility lacks the testing materials for their choice of santiization, hot water. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. Hot water sanitization shall be tested with either thermo labels or a maximum registering thermometer.
- K23: No rodents, insects, birds, or animals
In the kitchen area, near the custodial closet and exit, a dead cockroach was observed. No other evidence of cockroach infestation was observed. [CA] Clean and sanitize area of dead cockroaches or old droppings. Ensure to maintain the facility free of animals, pests, and vermin. [COS] Staff cleaned the floor of the dead body at time of the inspection.

Cartons of liquid whole eggs stored on top shelf of two door cooler above ready to eat foods and vegetables. [CA] All food shall be separated and protected from cross-contamination. Store all raw meat or other raw products of animal origin below ready-to-eat food items. [COS] Cartons were moved to bottom shelf.
