Any hot-held potentially hazardous foods not used by the end of the shift is discarded. 3. The cafeteria has a single two compartment warewash sink which is used for washing of dishes, vegetables, and handwashing. It is highly recommended installing a designated three compartment warewash sink for washing utensils, a preparation sink to wash vegetables and fruits, and a handwash station. 3. According to USDA regulation, schools serving lunch through the School Lunch program must have a written HACCP plan in place. Please keep a copy in the cafeteria.
