    In the back of house area, at the only hand washing sink, the paper towel dispenser had no paper towels available. [CA] Single-use sanitary towels shall be provided in dispensers; heated-air hand drying device may be substituted for single-use towels. [COS] Staff restocked the dispenser at time of the inspection.

    1. The open aire display cooler is out of order. Per staff, they are waiting on a part to repair it. No PHFs observed being stored in the cooler. 2. The fountain drink machine has an out of order sign placed on it. Per staff, they no longer plan to use the machine. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below. All equipment that is unnecessary or no longer required for the operation shall be removed from the premises to prevent harborage of vermin. Repair, replace, or remove the equipment.

    *REPEAT VIOLATION* In the back of house area, at the three compartment sink, both cold and hot water knobs were inoperable [CA] Ensure both the hot and cold water valve is on for the warewash sink at all times.
