    3 boxes of swai frozen fish found thawing on drainboard of 2 compartment sink and 2 bagged frozen chicken found thawing in standing water at 2 comp sink. [CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.

[CA] During food prep, keep food off of the floor at a minimum of 6 inches or relocate to shelf or counter. [COS] Observed raw shelled eggs above ready to eat food in walk in. [CA] Store raw eggs below ready to eat food.

Manually sanitize dishes in 3 comp sink at 200 ppm quat ammonium. Manager contacted autochlor during inspection. [COS] Dishes were set aside to be re-sanitized. Autochlor arrived during inspection and re-measured at 50 ppm chlorine. Observed interior ice panel with mold like debris. [CA] Clean and sanitized the ice panel.
