Follow-up for routine inspection conducted on 12/11/24. Verified that the following major violations are still in compliance: - There was no active warewashing at time of inspection, but employees were knowledgeable on the required steps and three compartment sink was properly prepared. Chlorine sanitizer at the three compartment sink was measured at 100 ppm. - Potentially hazardous foods are maintained inside of refrigeration units and measured at proper cold holding temperatures. See measured observations. - Observed proper handwashing by employee using water, soap, and single-use paper towels. - No live cockroaches or evidence of infestation observed. Areas where dead cockroaches were observed during previous inspection has been cleaned and sanitized.

Reviewed most recent pest control service report from Orkin dated 11/20/24 that notes there was dead cockroaches with no mention of live cockroaches activity. [COS] Operator removed all dead cockroaches and will sanitize affected areas. A follow-up inspection will be conducted by 12/16/24, and if any evidence of a live infestation is observed then facility may be subject to further enforcement action.
