    Observed potentially hazardous foods located in the display case and measured in the temperature danger zone (bagel dogs). The PHFs are subject to time control, but were not time marked and not discarded after being in the temperature danger zone for more than 4 hours. [CA] PHFs utilizing time as a public health control (TPHC) shall be time-marked for 4 hours and discarded within 4 hours from the point in time when food is removed from temperature control. [COS] PIC voluntarily discarded 3 bagel dogs.

  • K07: Proper hot and cold holding temperatures

    Observed potentially hazardous foods located in the food prep cold hold unit that measured in the temperature danger zone (sausage above the chill line measured at 48F). Per staff, the sausage was recently loaded into the unit. {CA] Keep PHFs properly cold held at 41F or below OR hot held at 135F or above. Keep PHFs below the chill line; do not overfill. [COS] PIC had staff relocate the overflow of PHFs to another refrigerator.

    Valves on back handwash sink are difficult to turn on and off. [CA] Repair or replace valves so they may be easily turned on and off for handwashing.

    Food Safety Certificate and Food Handler Cards not available for review. Food facilities that prepare, handle, or serve non-prepackaged potentially hazard foods shall have a valid Food Safety Certificate available for review at all times. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.

    Observed a potentially hazardous food located in the bagel display case that measured in the temperature danger zone (hot dog 68F). Per PIC, the hot dogs were from the second batch that were put out at 10am and are scheduled to be discarded at 2pm. The hot dogs were not time marked. [CA] Ensure PHFs that are subject to time control are marked for 4 hours and subsequently discarded. [SA] PIC will discard hot dogs at 2pm.
