[CA] Reheating for hot holding shall be done rapidly, and the time the food is between 41°F and 165°F shall not exceed two hours.
[COS] Staff were educated to reheat foods quickly on the range. All foods were reheated to 165°F.
K07: Proper hot and cold holding temperaturesCritical1. Sausage in the prep cooler was measured at 72°F. Per cook, they left it out temperature control overnight to thaw.
2. Red curry in the upright cooler was measured at 66°F. Per cooked they finished cooking it last night and let it cool overnight in the cooler.
[CA] PHFs shall be held at 41°F or below or at 135°F or above. Ensure to properly cool PHFs from 135°F to 41°F within 6 hours, reaching 70°F within the first 2 hours. Thaw foods in approved manners.
[COS] Both food items were VC&D. See VC&D report. Refer to educational handouts provided.
K35: Equipment, utensils: Approved, in good repair, adequate capacityFacility was using cardboard to line one of the shelves in the kitchen and the mechanical exhaust ventilation.
[CA] Use approved materials that are smooth, durable, and easily cleanable such as FRP, stainless steel, etc.
K19: Consumer advisory for raw or undercooked foodsFacility lacks a consumer advisory for items disclosed to come raw or undercooked.
[CA] Ensure to provide both a disclosure and reminder for undercooked or raw foods.
Disclosure means a written statement that clearly includes either of the following:
(1) A description of the animal-derived foods, such as “oysters on the half shell (raw oysters),” “raw-egg Caesar salad,” and “hamburgers (can be cooked to order).”
(2) Identification of the animal-derived foods marked by an asterisk denoting a footnote that states that the items are served raw or undercooked, or contain or may contain raw or undercooked ingredients.
(c) “Reminder” means a written statement that identifies the animal-derived foods by an asterisk that denotes a footnote that includes either of the following disclosure statements:
(1) Written information regarding the safety of these food items is available upon request.
(2) Consuming raw or undercooked meats, poultry, seafood, shellfish, or EGGs may increase your risk of foodborne illness, especially if you have certain medical conditions.
