Measured the chlorine sanitizer concentration in the mechanical dishwasher at 50 ppm during inspection. Facility now has test strips available to measure the sanitizer concentration. ROUTINE INSPECTION

A follow-up inspection to verify compliance of major violations will be conducted within five business days. The first follow-up inspection is free of charge. Subsequent follow-up inspections after the first follow-up shall be billed at $298/hour (one hour minimum) during normal business hours (Monday - Friday, 7:30 AM to 4:30 PM), and $645 (minimum of two hours) during non-business hours, and upon inspector availability.

    Facility lacks testing materials for sanitizer of choice. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

    Measured the final rinse temperature of the high temperature dishwasher at 141F during active warewashing. [CA] Mechanical sanitization shall be accomplished in the final sanitizing rinse by achieving a utensil surface temperature of 160°F, or as per manufacturer's specifications. [COS] Discontinue the use of mechanical dishwasher until repaired. Facility to utilize nearby 3-compartment sink for all washing, rinsing, and sanitizing of equipment and utensils. PIC stated that technician will arrive today to repair the mechanical dishwasher.

    At the handwash sink at the bar, observed the paper towel dispenser is empty. At the handwash sink in the warewashing area, observed no soap available for use. [CA] Handwash stations shall be fully stocked and accessible at all times. [COS] PIC restocked the handwash stations during inspection.

    At the service line, measured beansprouts and firm tofu from 50-55F. Per PIC, foods were recently restocked and placed into service line from the walk-in cooler. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [COS] Ice was added into containers of beansprouts and tofu to facilitate rapid cooling during inspection.

  • K36: Equipment, utensils, linens: Proper storage and use

    Observed working utensils (rice paddle) are stored in standing or ice water. [CA] Utensils shall be stored in the following manner: 1) in the food with their handles above the top of the food and the container, 2) in running water, 3) in a container of water at 135°F or above, 4) at room temperature if washed within 4 hours of initial use.

    1. Observe the handle of the ice scoop in direct contact with the ice in the ice machine. [Corrective Action] Store the scoop in a way that the handle is not in direct contact with the ice. 2. Observed pressurized cylinder not secured to a rigid structure. [Corrective Action] Secure the pressurized cylinder to a rigid structure.

    Dumpster lids observed left open. [Corrective Action] Keep the lids closed when not actively dumping trash.
