Observed some pre-packaged foods at the service area lacking information and or the whole label. [Corrective Action] Food prepackaged in a food facility shall bear a label with the following: 1) common name of the food, 2) list of ingredients in descending order of predominance by weight, 3) quantity of contents, 4) name and place of business of the manufacturer, packer, or distributor.

Bottom piece of evaporator in the walk-in cooler is partially detached and observed tilted to allow condensate to drip into a pan. [Corrective Action] Repair the evaporator.
- K36: Equipment, utensils, linens: Proper storage and use
Observed a cloth towel used to cover a sponge cake. [Corrective Action] Discontinue using a cloth towel to cover foods.
- K07: Proper hot and cold holding temperatures
Potentially Hazardous Foods in the open top prep cooler, single door upright display cooler, 2 door prep cooler - right, and 2 door prep cooler - left were measured above 41 degrees Fahrenheit. [Corrective Action] Maintain Potentially Hazardous Foods at or below 41 degrees Fahrenheit.
