    Observed used wiping towels on work tables. [CA] The used wiping towels must be in sanitizer between each use.

    Observed crab croquette and different types of sausage breads at room temperature in the case. According to the employee they have been there since this morning. [CA] They must be discarded once being out of temperature for 4 hours. There is a time code on a case but the employees are not following it. PHFs must be at proper temperature 41 degrees F and below or 135 degrees or above. [COS] The employee discarded the PHFs that were out for more than 4 hours.

    The top area of the front hand wash station has accumulated mold-mikdew-like growth. [CA] Clean the area thoroughly.

    The inside of the ice machine is turning black with mildew-like growth on the inside upper panel edges. [CA] Clean and sanitize the inside of the ice machine.

    Observed a spray bottle without a label. The employee did not know what it was. [CA] Label each spray bottle with the contents.

    Paper towel dispenser in kitchen area is stuck and not dispensing paper towels properly. [CA] Handwashing facility shall be clean, unobstructed, and accessible at all times. [COS] Manager fixed the dispenser.

  • K07: Proper hot and cold holding temperatures

    *Repeat violation Measured PHFs such as ham and cheese sandwiches are measured between 41-45F in open display case. Ambient temperature of the display case measured between 41-45F in different locations. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PIC stored most of the PHFs in back refrigerator to ensure they are maintained at 41F or below.

  • K35: Equipment, utensils: Approved, in good repair, adequate capacity

Ensure open food is protected from contamination or adulteration from flies or other insects. Per district manager, a new closed display case is ordered to store open food items.

    Measured quaternary ammonium sanitizer at less than 200 ppm in three compartment sink. No active warewashing at the time of the inspection. [CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM).

  • K41: Plumbing approved, installed, in good repair; proper backflow devices

    Observed two waste pipes extending into the floor sink near under counter refrigerator at coffee area. [CA] All equipment that discharges liquid waste shall be drained by means of indirect waste pipes, and all wastes drained by them shall discharge through an airgap into a floor sink or other approved type of receptor.
