[CA] Frozen potentially hazardous food shall only be thawed in one of the following ways: 1) under refrigeration that maintains the food temperature at 41°F or below, 2) completely submerged under potable running water for a period not to exceed two hours at a water temperature of 70°F or below, and with sufficient water velocity to agitate and flush off loose particles into the sink drain, 3) in a microwave oven if immediately followed by immediate preparation, 4) as part of a cooking process.

Charged follow-up inspection. Facility has been thoroughly clean and sanitized with the exception of 3 dried/old droppings that were missed from the deep cleaning. The droppings were immediately removed during time of inspection, and the surface cleaned and sanitized.

Facility was supposed to remain on prepackaged until confirmed by the Department during the follow-up inspection that the rodent infestation has been completely eliminated and no evidence of rodents observed. Observed rodent droppings on shelves and floor of dry storage room, behind refrigeration units and under sinks. Thoroughly clean and sanitize entire kitchen, set at least 12 monitoring traps and call the Department when ready for the follow-up inspection. School may only serve prepackaged foods. Facility is subject to a charged follow-up inspection.

According to staff, a mouse was sited in the kitchen yesterday. [CA] Ensure facility is free of vermin/pests. Eliminate rodents and thoroughly clean and sanitize kitchen and equipment. Recommend working with professional pest control. Set up a minimum of 12 traps adjacent to the walls. Facility may only serve prepackaged food only until a follow-up inspection is conducted by the Department and it is determined that the rodents have been eliminated.
