- K32: Food properly labeled and honestly presented
Observed numerous cases of frozen rice cakes in banana leaves offered for sale without any type of labels. Manager stated that items are delivered from a restaurant within the county. [CA] Food prepackaged in a food facility shall bear a label with the following: 1) common name of the food, 2) list of ingredients in descending order of predominance by weight, 3) quantity of contents, 4) name and place of business of the manufacturer, packer, or distributor.
- K16: Compliance with shell stock tags, condition, display
Manager stated that shellstock tags for shellfish are kept for 90 days, however, unable to provide records of tags. Shellstock tags were provided for current lot of shellfish being sold. [CA] Molluscan shellfish shall have shellstock tags and shall be properly stored and displayed, all shellstock tags shall be kept in chronological order for 90 days after harvest date.
- K21: Hot and cold water available
Hot water at the sinks behind the meat and seafood department measured at 115F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks.
- K27: Food separated and protected
Observed slabs of raw pork stored directly on cardboard boxes inside the walk-in refrigerator. [CA] All food shall be separated and protected from possible contamination. Provide food storage containers and or food grade wraps to separate and protect food. Observed cases of produce, meats, and seafood stored directly on the floor inside walk-in refrigerators. [CA] Food shall be stored at least 6 inches above the floor to prevent contamination.
- K23: No rodents, insects, birds, or animals
Numerous live flies observed throughout the facility. [CA] Use any and all approved methods to reduce and eliminate flies.
