    Hand wash station next to the 3-compartment had paper towel dispenser not operational. [CA] Paper towel dispenser shall be operational at all times. [COS] Cook within the kitchen adjusted the paper towel dispenser; operational.

    1. Cove base opposite side of prep sink is come off the wall. 2. Cove base on side of the cook line is starting to come off the wall. [CA] Repair the cove base in both locations.

FOLLOW-UP INSPECTION

This is a follow up inspection to verify that all major/minor violations have been addressed. Violations have been addressed and found within compliance: - K08: Time as a public health control; procedures & records. Facility has decided to place carnitas in the front prep area under TPHC and forms have been filled out. TPHC form has been reviewed by specialist and signed off, placed in the front board next to cashier station. - K35: Equipment, utensils: Approved, in good repair, adequate capacity. All propane and un-approved equipment has been removed from the facility. Impound will be lifted. Discontinue using propane powered equipment within the facility as mentioned in previous report. - Per PIC, they are thinking of installing a hood system within the facility. A person proposing to build or remodel a food facility shall submit plans and specifications for review and shall receive plan approval prior to starting any new construction or remodeling. Contact DEH at 408-918-3400 or at www.ehinfo.org to obtain plan check requirements. Continue on working on all other violations mentioned on 9/25/24.

    A single burner gas type stove observed in kitchen, next to cookline, outside of exhaust hood. Signs of cooking in this area observed (grease like build up on light cover above and on wall above). Per PIC they cook here only once every other day using a gas tank. Additionally, this unit appears to be custom made with inconsistent metal welding and lacks any manufacturer labeling/sanitation certification. [CA] Remove unapproved unit from premises. Unit does not appear to be approved for commercial use and sanitation. Generally, there must be no cooking outside of the exhaust hood and fire suppressant system - this creates a potential safety and fire hazard. REPEAT VIOLATION. Failure to comply may result in enforcement action. Equipment will be impounded during next inspection if still found on site.

  • K08: Time as a public health control; procedures & recordsCritical

    Carnitas in the front are under TPHC and are used for a maximum of 2-hours. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [SA] Forms were provided to PIC, fill out and will be signed on next follow up.
