Measured water temperature holding between 86F - 119F at 3 hand wash station located at front service line. Observed ONLY knee paddle system. [CA] Provide an adequate, pressurized, potable supply of warm water to be held between 100F - 108F. Note: Facility has hot water greater than 120F at warewash station and hand wash station located in prep area with warm water at 100F where water is control via cold/hot water knob.
- K27: Food separated and protected
Found several sauce condiments and other side items at customer self-service area. Observed sneeze guard unable to cover open containers. [CA] Food on display shall be protected from contamination by the use of packaging, counter, service line, or sneeze guards that intercept a direct line between the consumer's mouth and the food being displayed, containers with tight-fitting securely attached lids, display cases, mechanical dispensers, or other effective means.

PHFs on all stations are on TPHC. Written procedure was provided and signed.

- K40: Wiping cloths: properly used, stored
Quat sanitizer solution in wiping towel sanitizer bucket measured at 0ppm. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium).
- K07: Proper hot and cold holding temperatures
Measured the following PHFs at improper holding temperatures: Held inside under-counter refrigerator; turkey (45F) , milk (43F). [CA] PHFs shall be held at 41°F or below or at 135°F or above.
- K08: Time as a public health control; procedures & records
A written TPHC procedure is not available for review. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review.
