Employee observed dropping a receipt order on the ground, picked it up (and contacted the floor with gloved hands as a result), then handled a plate of food intended for customer service. Employee observed handling raw pork in the prep sink at the duck station, and then attempted to handle a cooked, cantonese style duck before being stopped. [CA] Employees shall wash their hands in all of the following scenarios: (1) Immediately before engaging in food preparation, including working with nonprepackaged food, clean equipment and utensils, and unwrapped single-use food containers and utensils. (2) After touching bare human body parts other than clean hands and clean, exposed portions of arms. (3) After using the toilet room. (4) After caring for or handling any animal allowed in a food facility pursuant to this part. (5) After coughing, sneezing, using a handkerchief or disposable tissue, using tobacco, eating, or drinking. (6) After handling soiled equipment or utensils. Per staff, items had been heat fried/baked between 30 minutes and 1 hour prior. Ambient of the unit measured 92F via probe. Raw pork measured 69F while maintained in running water in the preparation sink at the barbecue area. Per staff, it had been taken out of refrigeration approximately 2 hours prior for thawing. *Note: Ensure that meat internal temperature does not exceed 41F during thawing process [CA] Potentially hazardous foods shall be held at 41F or below, or at 135F or above to prevent the growth of bacteria. [COS] Potentially hazardous foods at the cook-line relocated to refrigeration or else immediately cooked. Potentially hazardous foods in the warmer to be used or discarded by the end of lunch service (2:30PM). Raw pork was immediately cooked.

Employees observed manually warewashing using chlorine sanitizer that measured greater than 200 ppm. ROUTINE INSPECTION

Limited inspection conducted in conjunction with complaint investigation CO0158476 *Note: Several other racks of raw pork belly measured 76F while hanging on hooks directly at the duck/pork prep station. Per staff, they had been delivered 1.5 hours prior and were currently in the process of cooling prior to placing them into the walk-in cooler. Facility is properly adhering to the two hour "active preparation" allowance for drying crispy pork. Ensure that pork is placed back into the walk-in cooler or cooked after two total hours of active preparation (i.e. drying). Manager states that the process for crispy pork belly is as follows: Raw pork is delivered. It is then immediately hung up on hooks to dry for no more than 2 hours (i.e. active preparation). It is then relocated to the walk-in cooler and allowed to dry further. It is then taken out and immediately cooked. Manager was aware of proper cooling, holding, and active preparation thresholds.

Ensure that potentially hazardous foods are separated into smaller portions, and that they are not covered with plastic wrap during the cooling process K14: Food contact surfaces unclean and unsanitized - Mechanical dishwasher has been repaired to output water at 160F. No manual warewashing violations observed K16: Not in compliance with shell stock tags, condition - Facility has agreed to keep shell stock tags for 90 days, all in chronological order. FOLLOW-UP INSPECTION

Note: This is a follow-up inspection to the routine inspection that was conducted on 01/28/2025. The facility was issued a conditional pass due to multiple major violations. During today's follow-up inspection, the handwash stations in the kitchen area were found to be easily accessible and fully supplied with soap and paper towel supplies. Temperature of the mechanical dishwasher is now raised to 157 oF as well. Some of the minor violations are also corrected. Therefore, the facility is issued a green pass placard. However, the above violations are repeated violations which need to be corrected. A compliance follow-up inspection shall be conducted by the district staff sometime next week. Since that inspection is going to be a second follow-up, the inspection shall be conducted at a charge of $298.00/hour to the owner.

    The ice scoop for the ice machine was stored on unclean surface. [CA] All reusable utensils including the ice scoop must be stored on clean surface/container in between use. Boxes of single use and other utensils were stored on the floor back in the storage area. [CA] For easy floor cleaning and to prevent insect/rodent infestation and hiding, store all utensils/equipment at least six inches off the floor on approved shelf/dunnage rack at all the time.

(2) Separating the FOOD into smaller or thinner portions. (3) Using rapid cooling EQUIPMENT. (4) Using containers that facilitate heat transfer. (5) Adding ice as an ingredient. (6) Using ice paddles. (7) Inserting appropriately designed containers in an ice bath and stirring frequently.
