Ambient of the unit measured 54F via probe. Per staff, items had been relocated from the walk-in cooler to the unit at the start of lunch service, approximately 2 hours prior. [CA] Potentially hazardous foods shall be held at 41F or below, or at 135F or above to prevent the growth of bacteria. [COS] Tea eggs in soy sauce were reheated to greater than 165F. All potentially hazardous foods in the prep cooler were relocated to the walk-in cooler.

    Large stock pot of tea egg in soy sauce measured 117F while maintained on a prep table in the main kitchen area. Per staff, tea egg in soy sauce had been removed from the stove approximately 1.5 hours prior. Staff stated that they were leaving it at room temperature to cool down prior to placing it into the walk-in cooler. [CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan. Cooling foods shall have enough space around the containers for cold air to circulate, be loosely covered, or uncovered and stirred as frequently needed to evenly cool. [COS] Instructed manager to place stock pot of tea egg into the preparation sink and create an ice bath. After approximately 15 minutes, tea egg measured below 70F. Instructed manager to continue to cool using the ice bath until item reaches 41F, and then to relocate to the walk-in cooler.

    In walk-in cooler, measured hard boiled eggs at 76F in deep container covered in plastic. Per PIC they were cooked less than 2 hours prior to inspectiond.
