    MAJOR: Salmon measured to be 121F. Per employee she had just finished cooking about 20-30 minutes prior and placed into warmer. MINOR: Steamer table measured to have tofu at 134F and shrimp at 131F. Per employee tofu was just cooked about 10-15 minutes prior and shrimp at cooked about 1 hour prior and placed directly into warmer. Both items observed to be double stacked. [CA] Keep PHFs at 135F and above for hot holding. Do no double stack containers in steam table. [COS] Tofu and salmon were reheated to 165F and returned their respective warmers. Shrimp was used up immediately.

FOLLOW-UP INSPECTION

Follow up visit due to major handwashing and holding temperature violation. Upon inspection: Steam table measured to have: -Beans at 176F -Cubed chicken at 141F -Rice at 163F -Mushrooms at 154F Non of the containers observed to be double stacked. Side prep cooler observed to not be use. Employee observed wash hands and don new gloves upon returning to work from break. Employee observed washing hands after cleaning grill and prior to prepping food. Major violations have been corrected. Continue to work on other violations from routine inspection report.
