The back door is left open. [CA] The door must be kept closed or install a screen door or an air curtain to help keep out rodents and insects.
- K45: Floor, walls, ceilings: built,maintained, clean
The floor in the corners, under equipment, and in the walk in cooler have accumulated debris. [CA] Thoroughly clean the floors. The cove base is deteriorated in some areas. The floors will need to be repaired with approved type materials.
- K40: Wiping cloths: properly used, stored
The wiping cloths were in sanitizer at 0ppm sanitizer. [CA] Keep the towels in sanitizer at 100ppm chlorine or 200ppm quat.
- K30: Food storage: food storage containers identified
The food storage bins are soiled with encrusted food particles. [CA] Thoroughly clean and sanitize the bulk food bins.
- K01: Demonstration of knowledge; food safety certification
There is not an employee with a food safety certificate. [CA] Food facilities that prepare, handle, or serve non-prepackaged potentially hazard foods shall have a valid Food Safety Certificate available for review at all times.
- K34: Warewash facilities: installed/maintained; test strips
The wall mounted sanitizer is not giving the correct concentration. It is reading a minimal amount. [CA] The quat must be at 200ppm. Provide the chlorine test strips as chlorine will be used to make the sanitizer. Went over how to make and test the sanitizers with the manager.
