- K35: Equipment, utensils: Approved, in good repair, adequate capacity
Measured the ambient temperature of the walk-in cooler at 46F. [CA] Refrigeration units shall maintain foods at 41F or below. Discontinue storage of Potentially Hazardous Foods until the unit is repaired.
- K07: Proper hot and cold holding temperaturesCritical
Measured multiple Potentially Hazardous Foods (cream, cheese, milk, liquid eggs, cut tomato, etc.) in the walk-in cooler from 46-52F. Per PIC, most foods were stocked over four hours ago or overnight. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [COS] All Potentially Hazardous Foods were voluntarily condemned and discarded at the time of inspection. See VC&D report. NOTE: Facility to follow up with photo evidence that the walk-in cooler has been repaired.
- K34: Warewash facilities: installed/maintained; test strips
Facility lacks testing materials for mechanical dishwasher (chlorine). [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.
- K40: Wiping cloths: properly used, stored
Observed wiping cloth stored directly on food preparation counter. [CA] Wiping cloths shall be stored in an approved sanitizing concentration when not in active use.
