    Observed the tarter sauce and dynamite sauce at 49 degrees F. [CA] The PHFs must be at 41 degrees F maximum. The manager discarded the product on her own per her store requirements. Repair the refrigerator to hold PHFs at 41 degrees F maximum.

    Observed grout missing on the floor tiles so food and water accumulation in the gaps is present. [CA] Repair the floor.

    Inside the inserts in the large prep unit: measured internal temperature of diced tomatoes to be 45-49F. PIC stated tomatoes had been held for two hours. Observed the metal inserts were stored on top of a layer of ice (ice did not come up the sides of the prep insert containers). [CA] Keep potentially hazardous foods at 41F and below or 135F and above. Add enough ice so that it is at the same level as the food inside the containers.
