Conducted routine inspection as part of the requested Facility Evaluation process. Santa Clara County Health Permit NOT issued due to temperature violations/refrigeration units unable to keep temperature.

    Observed potentially hazardous foods that measured in the temperature danger zone located at the steam table (meatballs 109F, soup 109F), in the lowboy cooler under the slicer (tomatoes 55F), and in the walk-in cooler (chicken 46F, salami 46F, cheese 46F). [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace units if necessary. [COS] PIC noticed the steam table wasn't turned on; she reheated the PHFs on the steam table and turned the steam table on.

    Observed potentially hazardous food located in the food prep cold hold unit that measured in the temperature danger zone. Per PIC, facility was closed the day prior (Christmas) and everything had to be made fresh. Tomatoes were recently cut and placed into the unit. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Cool the cut tomatoes back down to 41F in the walk-in cooler or consider using time control (TPHC- Time as a Public Health Control) which involves filling out the Department's TPHC form, time marking the food for 4 hours and discarding the food at the end of the 4 hour mark. [SA] PIC will discard any remaining tomatoes at the end of the 4 hour mark.

  • K06: Adequate handwash facilities supplied, accessible

    Paper towels were not in the employee restroom (a roll of paper towels was located near the handwash station). Per PIC, the dispenser broke and they are waiting for their new one to come in. [CA] Ensure soap and paper towels are stocked in dispensers.
