    Sliced tomatoes in one of the upright coolers measured between 48-53F. Per chef, staff left the kitchen about 2 hours ago. Hotel pan was labeled with a date of 4/10/2026. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Chef was unsure why the tomatoes were out of temperature and discarded them. See vC&D report.
