- K39: Thermometers provided, accurate
1) Facility lacks metal probe thermometer for use. [CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods. 2) Observed refrigeration units are missing internal thermometers. [CA] A thermometer shall be placed in each refrigeration unit where it is easily visible while checking ambient temperature.

1) Observed window to the food preparation area was kept open without any screening during inspection. [CA] Openable windows shall be screened to prevent the entrance and harborage of animals, birds, and vermin. 2) Observed personal employee belongings (cell phones, bags) stored directly on the food preparation counter. [CA] Provide a designated storage area for personal employee belongings.

Observed employee washing dishes without the use of sanitizer. When asked to fill the 3-compartment sink with sanitizer, observed the sanitizer dispenser is in disrepair and is not properly dispensing. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] Specialist directed employee to manually fill the 3-compartment sink with sanitizer solution during inspection. Remeasured the quaternary ammonia sanitizer at 400 ppm. Facility to call technician to repair the sanitizer dispenser.

Measured the maximum water temperature at the preparation sink and the 3-compartment sink from 110-115F. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility (or from 100-108F at handwash sinks).
