Observed potentially hazardous foods that measured in the temperature danger zone located in the food prep cold hold (sliced tomatoes 52F, pico de gallo 51F, beans 48F). Per staff, the PHFs have been in the unit since 9:30am. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace unit if necessary. [SA] Staff will discard PHFs in the unit at 1:30pm and use TPHC (time control) as a suitable alternative until the unit can be fixed or replaced.
