ROUTINE INSPECTION
This was conducted as a joint inspection with M. Nguyen, REHS, and J. Luces, REHS. This report was generated by J. Luces Observed chocolate with frosting stored at ambient temperature in the front display case. By 1/30/2026, provide documentation of ingredient list and indication of shelf stability to mindy.nguyen@deh.sccgov.org. Failure to provide documentation by this date could result in additional billable follow-up inspections.

- K33: Nonfood contact surfaces clean
Observed an accumulation of dust on the fan guard of the walk in freezer. [CA] Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed a mop stored with its head directly in a bucket in a manner that it is unable to air dry. [CA] After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
- K14: Food contact surfaces clean, sanitized
Observed a food worker wash and rinse a metal food container and then subsequently dip the container in a quaternary ammonia sanitizer solution for less than 60 seconds. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a chlorine solution of 100 PPM concentration for at least 30 seconds or by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [COS] The violation was corrected by the food worker submerging the food container to the sanitizer solution for at least 60 seconds.

A. Observed the front display cooler to be inoperable at this time and non-food/personal items were observed stored in the unit B. Observed the main preparation cooler to be inoperable at the time of this inspection with non-food items being stored inside of the unit. [CA] All equipment must be fully operational and utilized for their intended purpose, or removed from the facility to prevent clutter
