1. Cafe 10 routine inspection Most items at the service area are on TPHC. TPHC logs and written procedures were available for review. Ensure all TPHC items are clearly referenced on the time log. Note: PIC stated the facility may purchase a new dishwashing machine (likely a different type) to replace the old one. Prior to the installation of any new equipment, submittal is required to Plan Check. Observed prepackaged foods in customer self-service area (cookies, dried fruits, chocolate-covered pretzels) lacked sufficient labeling information. [CA] Food prepackaged in a food facility shall bear a label that includes: 1. The common name of the food. 2. If made from two or more ingredients, a list of ingredients in order of weight. 3. Quantity of the contents. 4. Name and place of business of the manufacturer, packer, or distributor.

Observed pears and apples stored offered in the self-service area; per PIC, fruits have not been washed yet. [CA] Produce shall be thoroughly washed in potable water prior to being cut, combined with other ingredients, cooked, served, or offered for human consumption. Specialist may follow up regarding sign requirements.
